Look in the yellow pages under Meat Processors or Meat Retail. Most smaller processors will be glad to accommodate any specific requests and two days probably won't be a problem.

I don't know any in Lincoln but there are at least two places I could go for this near Greeley, CO so, I'm guessing finding somebody in Lincoln won't be a problem.
