Good lord man, DO NOT use venison tenerloin for stew. Marinate that sucker for a day or so and sear it in a pan, and then put in the oven to about medium done.

Don't waist it on a stew. I like to sear mine on the grill then once they are medium rare (about 12 mins at 350) take 1/2 a jalapeno, spread cream cheese on it, put a thin slice of the tenderloin on it, wrap it in bacon (pre cook the bacon in the micro about 40 seconds)and then bake it in the oven at 400 until the bacon is crispy (about 20-25 mins). Lots of work but make great finger foods.

Whatever you like. I like to just use olive oil, salt, pepper, and a lot of rosemary (fresh). Let it marinate for about a day.

Marinate and/or coat with your favorite rub. Grill it whole over high heat. Make sure that you don't cook it past medium rare because it will dry out quickly beyond that point. Slice immediately before serving.

Yeah Carl thats why I was figuring a stew. Since I've google fu'd it a little better, I'm seeing much of what you all are saying. Thanks!
