Take her to Lydia's.  It is an amazing restaurant.  The Sunday brunch is fabulous.  The food is delicious and the atmosphere is elegant.

  Another place is brunch at Union Station.  Wonderful place to celebrate!

Go visit the Negro League HOF, I’ve heard it’s a great museum and on my agenda for next trip to KC

Don't buy a card.  Make it yourself.  And write a little poem yourself to put in your card.  

Also:  Lydia's might be appropriate.  The Negro League HOF sounds awesome.  But perhaps you can hit that place  sometime when one of your college buds drops by.  

Super lame...but make a word search puzzle (puzzlemaker.com) with words that are about her.

Or do it in the caboose 

@teachercd, is there a caboose for rent? Or is the whole train a hotel? Sounds exciting!

To make it really memorable, don't do anything. Not recommended, but she will never forget.
