Do not question the brown sugar on top..that is what makes it so good. This is the best banana bread recipe I have ever made and is the only recipe I will use.
Banana Bread:
2 cups flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup margarine
3/4 cup brown sugar
2 eggs, beaten
2-1/3 cups mashed bananas
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup finely chopped walnuts
Preheat oven to 350 degrees.
In a large bowl, combine flour, baking soda, and salt. In a seperate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas and finely chopped walnuts until well blended. Stir banana mixture into flour mixture-stir just enough to moisten. Spray loaf pan with Pam and pour batter into it. Cover the top with brown sugar.
Bake for 60 to 65 minutes. Let pan cool for 10 minutes.
