Brunswick Stew:

2-(4-lb.) Stewing Chicken

1 lb. Salt Pork, Sliced Thin Or Chopped

8 Cups Freshly Cut Corn

10 Cups Sliced Peeled Tomatoes

4 Cups Diced, Peeled Potatoes

8 Cups Butter Beans-(Lima Beans)

2 Medium Onions, Chopped

1/4 Tsp. Ground Red Pepper

Salt & Pepper, To Taste

Cut up chicken; cover with water in heavy kettle; cook until meat falls off the bone, adding water if necessary.

Add salt pork, vegetables and seasoning.

Simmer slowly until tender and mixture is thick and well blended.
