Butterscotch Pie:

2 cups brown sugar, tightly packed
4 egg yolks broken up and slightly mixed

2 egg whites-(for the meringue)

4 heaping tablespoons flour

2 cups cold water

4 tablespoons butter

2 teaspoons vanilla 

2 tablespoons sugar/(for the meringue)

Mix sugar and flour together. Add water gradually and stir over heat until thick. Put a little of this hot mixture into slightly beaten egg yolks and then add yolks, butter and vanilla to the rest of the mixture. Fill a baked 9" crust and let cool. 

FOR THE MERINGUE: Beat 2 eggs whites until they hold peaks and add 2 tbs of sugar. Brown in 350 degree oven about 10 minutes or so.

***Double the pie mixture-(not the meringue)-(so there's a little more.)
