Carrot Cake

This carrot cake is really good!  Sorry I don’t have a picture.  Will take one the next time I make it!

Carrot Cake:

1-1/2 Cups Salad Oil
2 Cups Sugar
4 Eggs
2 Cups Flour
2 Cups Finely Grated Raw Carrots
1 Tsp. Baking Soda
1 Tsp. Salt
2 Tsp. Cinnamon
1 Cup Nuts

Mix oil and sugar.  

Add eggs, one at a time, besting well.

Add flour, baking soda, salt and cinnamon.

Add carrots and last add nuts.

Bake at 350 degrees in 9x13-in. pan for 40 minutes or until done.

Cream Cheese Frosting:

1-(8-oz.)-Pkg. Philadelphia Cream Cheese
1-lb. Or 2-1/2 Cups Powdered Sugar
1 Stick Butter
2 Tsp. Vanilla
***I eyeball the ingredients 

Mix all the cream cheese frosting ingredients together; spread over cake.

Chopped Nuts/Pecans Can Be Put Over The Top!
