Cheesy Twice Bakes:
6 large potatoes
1-(8-oz.) pkg. Cream Cheese, softened
1 stick butter, softened
1/2 cup Shredded Cheddar or Pepper Jack Cheese
Salt and Pepper to taste
Green onion or Scallions, sliced
1/4 cup Shredded Cheddar or Pepper Jack Cheese
Wash and bake potatoes. Slice in half-(reserve skins), scoop out insides and mix together Cream Cheese, butter, Cheddar Cheese or Pepper Jack Cheese, salt and pepper. Stuff potato mixture back into potato skins, top with remaining cheese and green onions. Bake 400 degrees for 20 to 30 minutes.
