Crab Cakes:
1 lb. Crab Meat
3/4 Cup Panko Bread Crumbs
1/4 Cup Milk
1 Egg, Lightly Beaten
3 T. Mayonnaise
1 T. Worcestershire Sauce
1 Tsp. Dijon Mustard
1 Tsp. Old Bay Seasoning
1/4 Cup Chopped Sweet Onion
1/4 Cup Chopped Bell Peppers
***The More Color, The Better
1/2 Tsp. Salt
1/4 Tsp. Pepper
1 T. Oil
1 T. Butter
Mix the bread crumbs, milk, egg, mayonnaise, Worcestershire Sauce, mustard, Old Bay Seasoning, onions, salt and pepper in a bowl.
Gently fold in the crab meat and refrigerate the mixture for at least an hour.
Chilling keeps the patties from falling apart in the pan.
Form the chilled mixture into six patties.
Fry the patties in the butter/oil until golden brown on both sides.
Cook the patties on medium to get the color then reduce the heat to low to finish heating the patties through.
Serve with lemon wedges.
