Fried Okra:
2 eggs, beaten
1-1/2 cups cornmeal
Ground Black Pepper
Salt
Oil
Cayenne Pepper to taste
In a small bowl, soak okra in beaten egg for 17 minutes in the refrigerator. In a medium bowl, combine cornmeal, salt, pepper and cayenne pepper.
Heat oil in a large skillet over medium high heat. Dredge okra in the cornmeal mixture..cover it well. Place coated okra in hot oil--stir now and then and once the okra starts to turn brown, turn heat down to medium. Drain on paper towels.
Sprinkle Paula Deen's House Seasoning over okra.
Paula Deen's House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Stir the ingredients together. Keep the seasoning in a shaker by the stove for convenience.
