Going to be busy today..just have time to post one recipe. I am sorry that I missed yesterday...have alot going on around here. Anyway...I made these stuffed peppers last night and they were SUPERB..in our opinion...and I highly suggest making them if you like stuffed peppers.
Stuffed Peppers:
1-1/2 lbs. hamburger
1 purple onion, chopped..used a little more than one cup
2 bulbs garlic, minced
2 tsp. chili powder
1 tsp. salt
1/2 tsp. ground black pepper
2 cans condensed tomato soup
Whole pkg. Cheddar cheese, shredded-I bought the one in a pkg...not sliced cheese
2 boxes Rice A Roni Beef, cooked
8 medium green peppers
Cook the ground beef, garlic & onion until browned; drain the fat.
Add the tomato soup & seasonings; simmer covered for 10 minutes.
Add the cheese & stir until cheese is melted. Stir in the cooked rice. Set aside to cool.
Slice the tops off the peppers and clean the peppers. Put the peppers in a Dutch Oven..cover with water..add some salt..and boil for 3 minutes or until barely tender; drain.
Lightly spray a muffin tin.
Stand the pepers upright in the muffin tin & stuff with hamburger-rice mixture.
Bake in a pre-heated 350 degree oven for 20 minutes.
**I had rice left over..so just put it in a covered container and stuck it in the fridge. Just by looking at the amount of rice that wouldn't fit in the peppers..I would say buy 2 or 3 more peppers to use it all.
