Grilled Stuffed Jalapeños:
14 Jalapeño Peppers, Halved Lengthwise & Seeded
2 Slices Center-Cut Bacon
1/2 Cup Cream Cheese, Softened
1/4 Cup Minced Green Onion
1 Tsp. Fresh Lime Juice
1/4 Tsp. Kosher Salt
1 Small Garlic Clove, Minced
2 T. Fresh Cilantro
2 T. Chopped Seeded Tomatoes
Directions:
Preheat grill to medium-high heat.
Cook the bacon in a skillet over medium heat until crispy. Remove the bacon, and drain on paper towels, and crumble.
Combine the crumbled bacon, cheeses, and the next 4 ingredients through garlic in a bowl, stirring to combine. Fill the pepper halves with the mixture.
Place the peppers cheese side up on the grill, cover and grill for about 8 minutes, or until the bottoms are charred, and the cheese mixture is lightly browned.
Place peppers on serving platter. Sprinkle with tomato, and cilantro.
