Mountain Bar Cookies:
2 cups granulated sugar
1/2 cup butter
1/2 cup milk or water
4 T. unsweetened chocolate cocoa powder
1/2 cup Creamy or Chunky Peanut Butter
3 cups Quaker Old-Fasioned Oats
2 tsp. Pure Vanilla Extract
Line a baking pans with parchment paper, wax paper, or non-stick baking pad.
In a large heavy saucepan over low heat, add sugar, butter, milk or water, and cocoa powder; stir until melted. Increase heat to medium-high and bring just to a boil, stirring constantly so the mixture does not burn. Remove from heat.
Add peanut butter, oats, and vanilla; stir until well mixed. While mixture is still warm, drop dough by rounded T. onto the prepared baking pans.
Let sit until cool and the chocolate is hardened.
