Frito Pie:

***Use Amounts According To What You Need

Fritos

Refried Beans

Ground Beef Cooked With A Packet Of Taco Seasoning Added/Chopped Onions Or According To Taco Seasoning Directions

Lettuce/Chopped Or Shredded

Tomatoes/Chopped

Grated Cheddar Cheese/Mexican-Style Cheese

***Your Favorite Cheese

Guacamole/Sour Cream/Salsa/Chopped Black Olives/Sliced Jalapenos/Your Favorite Toppings

Put Fritos on Serving Plate; Put Rest Of Ingredients In Following Order:

Refried Beans

Ground Beef

Lettuce

Tomatoes

Grated Cheese

Taco Sauce/Variety Of Sauces

Top with your choice of extra sauces or toppings.

***You can make a Taco Bar Style so everyone can make their own plate and assemble it the way they want.

*** I like to frost fudge with chocolate icing and put some pecans in it-up to you.

Chocolate Fudge:

3 Cups Sugar

2/3 Cup Evaporated Milk

3/4 Cup-(1-1/2 Sticks)-Margarine

1-(12-oz.) Pkg. Chocolate Chips

1-1/2 Cups Marshmallow Cream

1/2 Cup Pecans, Chopped

1/2 Tsp. Vanilla

Combine sugar, milk, and margarine in heavy saucepan; heat to boiling.

Stir constantly about 5 minutes over medium heat or until mixture reaches soft ball stage-(238 degrees); remove from heat.

Add remaining ingredients. Stir vigorously until well blended.

Pour into greased 13 x9x2 in. buttered pan; cool and cut into squares.

***I have posted the black-eyed peas recipe before..added a can of corn to it the last few times I have made it and it is really good..made it again today for dinner tonight. If I had the choice to go to a good restaurant or have a Rib Eye Steak, etc. and this black-eyed pea recipe..I would hands down pick staying home. Can't beat staying home..putting a good steak on the grill and having a cold beer and this:)

Black-Eyed Peas:

2-14.5-oz. Cans Hunt's Diced Basil Garlic & Oregano

3 Cloves Garlic

1 White Onion, Chopped

1 Pkg. Black Peppered Bacon

2 Green Bell Peppers, Chopped

1 Pkg. Black-Eyed Peas

1 Can Corn, Drained

Russet Potatoes, Cut In Half-(Skins On)

***Or Baby Red Potatoes-(Don’t Cut In Half)

Cover black-eyed peas with cold water in bowl; refrigerate overnight, uncovered.

When ready to make; drain water off peas; put in Dutch Oven.

Add all above ingredients; stir.

Put on stove; cover and boil.

Once it starts to boil, turn down to low heat for 3-4 hours; with lid on.

***It won’t hurt it to cook it longer; just remember to stir occasionally.
