I haven’t made this, it looks good to me.
WRANGLER RIBS RECIPE:
This recipe is taken from a cookhouse recipe book of the King Ranch in Texas.
INGREDIENTS:
2-lb.beef short ribs-(you can use any ribs you like - beef or pork)
FOR THE BBQ SAUCE :
Half cup good quality strong black coffee
1 cup brown sugar-(recipe calls for molasses sugar)
1 cup tomato ketchup
2 Tbsp Worcestershire Sauce
1 tsp.dried oregano
2 cloves garlic, crushed
1 tsp. black pepper
Half tsp, crushed chillies
METHOD:
Mix all of the bbq sauce ingredients in a sauce pan and bring to a gentle simmer. Cook for 5 minutes then leave the sauce to cool.
Preheat an oven to 160 degrees C (320 degrees F).
Place a large piece of kitchen foil on a work surface and put the rack of ribs on top. Use about half of the BBQ Sauce to coat both sides of the ribs.
Take a second piece of foil and cover the ribs, making sure the ends are tightly folded to create a sealed envelope. Place onto a baking tray and place into the pre heated oven.
Cook for 2-1/2 hours.
After 2-1:2 hours, take off the foil, baste the ribs with some of the remainder of the BBQ Saucr and return to the oven. Cook for a further 45 minutes and baste the ribs a couple of times during this period.
You can also cook on the BBQ or better still, low and slow in a smoker.
