Flounder Bites With Jalapeno Tartar Sauce:

1 Cup Mayonnaise

2 T. Chopped Shallots

1 T. Chopped Jalapeno Pepper

2 Tsp. Hot Sauce

1 Tsp. Lemon Juice

1/4 Tsp. Salt

1/4 Tsp. Ground Red Pepper

1-(8-oz.) Pkg. Hushpuppy Mix

3/4 Cup Milk

1-1/4 lb. Flounder Fillets, Cut Into 1-in. Pieces

2 Cups Vegetable Oil

1 Cup Flour



Stir together mayonnaise, shallots, Jalapeno Pepper, Hot Sauce, lemon juice, salt and red pepper in medium bowl.



Cover and chill until ready to serve.



Stir together hushpuppy mix and milk in medium mixing bowl.



Pour oil into large deep skillet to depth of 1/2-in.

Heat oil to 350 degrees.



Dredge fish in flour, then in hushpuppy mix.



Place fish in oil and fry in batches 3-4 minutes on each side or until golden.



Serve with Jalapeno Tartar Sauce.
