Griddle Me This

This is a smoker thing, not griddle thing, so sorry but I’m going to do a smoked braided whole pork loin this week. Had never heard of or seen before but it looks and sounds awesome.

Did the braided pork loin thing today. It was excellent but dang do we have a bunch leftover. Did a 9.7 lb. Pork loin. It looked pretty much just like the picture up there, just a little different color because I used Blues Hog Raspberry Chipotle bbq sauce (which btw is awesome). Sent huge baggies home with both my son and daughter, had it for lunch (5 people) and dinner (4 people) and still have about 25% left.

The braiding was very easy and got a bunch of rub flavor (used Meat Church The Gospel and The Holy gospel rubs) in there due to basically tripling the surface area before braiding. I’d definitely do it again.

Meat Church is good stuff!

 
This is not really all that creative BUT

Take some toritillas and slap them on the griddle.  Toss some (cooked) mac N cheese in there, with some shredded cheese added on and some diced up sweet pickles.  

Make a mac and cheese quesadilla. 

I have yet to create the perfect dipping sauce for it but overall it is pretty solid.

Sweet pickles in mac and cheese?  I like pickles and I like mac and cheese.  Never have had them together.

I know, it sounds weird but it turned out really good.  

Also, sometimes I will season the outside of the shell for quesadillas and it can really add some awesome flavor.

I guess it's no different than me putting green olives in a grilled cheese sandwich.  It's a game changer.
