Jumbo Coconut Shrimp:

I haven’t made this. It got great reviews.

Peanut Oil, For Frying

1-1/2 lbs. Jumbo Shrimp, Peeled & Deveined

*** Use Fresh Jumbo Shrimp From The Deli That Are Already Peeled & Deveined

1 Cup Panko Bread Crumbs

1 Cup Shredded Sweetened Coconut

4 Large Eggs

Salt & Freshly Ground Black Pepper

1/2 T. Onion Powder**

1/2 T. Granulated Garlic Powder**

***Or Substitute Old Bay Seasoning & Creole Seasoning/Or Amazing Taste Seafood Seasoning

Preheat Peanut Oil in a Deep-Fat Fryer to 350 degrees.

Butterfly shrimp and set aside.

In medium bowl mix together Panko Bread Crumbs and coconut.

In another medium bowl, beat eggs and dash of salt and pepper. In a third bowl mix flour, Onion Powder and Garlic Powder together/or substitute Old Bay Seasoning & Creole Seasoning/Amazing Taste Seafood Seasoning

Dredge shrimp in flour, then eggs, then the bread crumbs.

Place shrimp in preheated Deep-Fat Fryer and fry, in batches, until crisp and golden brown; 2-3 minutes.

Drain on a paper towel-lined sheet tray.

Serve Hot With Zesty Dipping In A Bowl Off To The Side For Dipping/Or Cocktail Sauce/Your Favorite Dipping Sauce.

Zesty Dipping Sauce:

1-(6-oz.) Jar Orange Marmalade

1/4 Cup Sweet Asian Chili Sauce

1 Lime, Juiced

Mix all ingredients in a small bowl.
