THE HELLMANN'S CAESAR SALAD:

Yield: 4 small side salads or 2 large dinner salads

DRESSING:

½ cup Hellmann's Mayonnaise (Real, Light or Reduced Fat)

¼ cup milk

¼ cup Grated Fresh Parmesan Cheese

2 T. lemon juice

2 T. Dijon Mustard

1 garlic clove, pressed

1 anchovy fillet (opt.-) (I never use it)

1/4 tsp. pepper

SALAD:

1 head romaine lettuce, torn into bite size pieces

2 slices cooked and crumbled bacon (optional) (I don't add this)

1 cup Croutons

DIRECTIONS:

Place dressing ingredients in a small covered jar, shake well.

Chill until ready to serve.

In a large bowl toss together lettuce, croutons, optional bacon and ½ cup or more of the chilled dressing.

Garnish with additional Fresh Grated Parmesan Cheese and fresh ground pepper.

Dressing will keep for up to 1 week in the refrigerator. Makes 1 cup dressing.
