You can’t fix it....

That's pretty crazy, and it almost makes me think the neighbor is planning on a huge Thanksgiving meal but hedging her bet if people don't show and serving you all the extra food.

OR, she doesn't have a family of her own and this will be her big Thanksgiving meal.

Either way, it's weird.

 
I get where you're coming from @JJ Husker. You'll be one week away from THE turkey holiday. Would be nice to do something different, or at least have another option (maybe just do a turkey breast and ham or tenderloin of some kind).

Yeah, I think we're going to do a ham instead of a roast turkey. I'll still smoke a turkey cuz that makes for awesome football snacking. I'd love to just go with some grilled steaks or a prime rib but my wife won't go for that for Thxgiving. It'll be alright, I don't eat that much turkey anyway. My favorites are all the sides.

Have you smoked a prime rib before?

 
I smoked a prime rib a few years back. It turned out kind of dry and prime rib is really good without smoking, so I haven't bothered to do it again.

I think the trick would be getting a bit of a sear/crust on the outside and keeping it under 130 internal. Probably have to do a reverse sear, smoke it first then hit it briefly with some high heat. No matter what, I'd call it done when that internal temp is right. I can't imagine anything under 135 would be "dry" (but I may be surprised). Probably would be best to also use an actual prime cut so there is plenty of intramuscular fat.

 
Well the progressive dinner went fine. Not much turkey got consumed but with multiple houses there was plenty of other food to choose from.

Met a couple new neighbors. One family at the end of the cul de sac I really enjoyed. Had a good time visiting and learning about them. All I knew was they were Asian but turns out he is an international pianist that is a professor of piano at UNC. Luckily the last two houses both had pianos so he regaled us with some Mozart, Chopin and Brahms. It was really cool. He didn’t think we’d recognize any Taiwanese or Chinese tunes so he stuck with some better known classical. We were all giving the hosts sh#t, accusing them of previously claiming their pianos were broken and didn’t work. :lol:

 
Okay, went to pick up breakfast burritos this morning. Place had a ridiculously long drive thru line so they had a gal out taking orders on a paper pad. Problem was she wouldn't take the orders inside. She is literally going out into the street getting absolutely everyone's order but the car she started with is at the window and now she's just standing under a shade tree. Somebody finally came out to get her and it finally occured to her she is an idiot. Can't fix it.

And that is exactly ALL that happened.  :lol:

This place has really good Mexican food but their hiring and training practices are severely lacking. Placing your order and getting the correct food is always a challenge.
